Fall Bean Soup



The weather is finally getting cooler, which means it's soup season.  This weekend we were busy cleaning out the garage and shed, so a crockpot of soup that I could put on and then neglect until dinnertime was perfect.  We had soup for days :)

1 lb of dried navy beans
1/2 chopped onion
2 carrots sliced
1 cup of cooked ham, chopped (Leftover shredded ham is awesome, if you have it.
   You can cook the beans with a leftover ham bone for added flavor).
1 8 ounce container of creamy tomato soup

Rinse dried beans with water and discard any stones.  Place beans in crockpot and cover well with water, refrigerate overnight.  Next morning drain all of the liquid.  Return beans to crockpot and cover well with fresh water.  Add chopped onions and sliced carrots.  Cook until beans are tender.  Remove bone, if you used one. Using a potato masher or immersion blender, mash beans to thicken soup (do not puree all of the beans, you just want to thicken).  Stir in chopped cooked ham and creamy tomato soup. Continue cooking until soup is heated through.  Salt to taste.  Enjoy!
